Chickpea Pita Meal Prep

Ingredients

  • 4 Pitas cut in half
  • 2 Cans Chickpeas
  • 1/2 Cup Feta Cheese
  • 1/4 Cup Artichokes Chopped
  • 1/4 Cup Red Onion
  • 1/4 Cup Kalamata Olives
  • 1/2 Cup Cherry Tomatoes
  • 1 English Cucumber
  • 3 tbsp Italian Parsley

Dressing

  • 1 tbsp Red Wine Vinegar
  • 1 tbsp Olive Oil
  • Salt
  • Pepper
  • Garlic Powder

Toppings

  • 1/2 Cup Tzatziki (divided into 4 containers)

Instructions

  • Chop up cucumber, tomatoes, artichokes, and red onion
  • Mix together the ingredients above minus the tatziki and the pitas
  • Divide micture into 4 containers and serve with pita brea
  • Keep pita bread out of the containers and store seperatly so it does not get soggy
  • When eating assemble pitas with tatziki and then fill with chickpea mixture
