Chickpea Pita Meal Prep
Ingredients
- 4 Pitas cut in half
- 2 Cans Chickpeas
- 1/2 Cup Feta Cheese
- 1/4 Cup Artichokes Chopped
- 1/4 Cup Red Onion
- 1/4 Cup Kalamata Olives
- 1/2 Cup Cherry Tomatoes
- 1 English Cucumber
- 3 tbsp Italian Parsley
Dressing
- 1 tbsp Red Wine Vinegar
- 1 tbsp Olive Oil
- Salt
- Pepper
- Garlic Powder
Toppings
- 1/2 Cup Tzatziki (divided into 4 containers)
Instructions
- Chop up cucumber, tomatoes, artichokes, and red onion
- Mix together the ingredients above minus the tatziki and the pitas
- Divide micture into 4 containers and serve with pita brea
- Keep pita bread out of the containers and store seperatly so it does not get soggy
- When eating assemble pitas with tatziki and then fill with chickpea mixture
