Chicken Pesto Panini

Ingredients

  • 2 slices of sourdough bread
  • 1 tbsp olive oil
  • 5 mozzarella slices
  • 1/2 tomato sliced
  • 1/4 cup pesto
  • 1 chicken breast cut in half to make a cutlet

Instructions

  • Brush bread pieces with olive oil and set aside
  • Cut chicken in half into a cutlet and season with italian seasoning
  • Place chicken in pan with olive oil and cook for 5-7 minutes on each side
  • While chicken is cooking add pesto to other side of toast, add tomato slices, and mozzarella
  • Once chicken is done cooking add it and put sandwich together
  • Place on one side in a pan and cook for two minutes over medium heat
  • Take off heat and cut in half to enjoy!
