Chicken Pesto Panini
Ingredients
- 2 slices of sourdough bread
- 1 tbsp olive oil
- 5 mozzarella slices
- 1/2 tomato sliced
- 1/4 cup pesto
- 1 chicken breast cut in half to make a cutlet
Instructions
- Brush bread pieces with olive oil and set aside
- Cut chicken in half into a cutlet and season with italian seasoning
- Place chicken in pan with olive oil and cook for 5-7 minutes on each side
- While chicken is cooking add pesto to other side of toast, add tomato slices, and mozzarella
- Once chicken is done cooking add it and put sandwich together
- Place on one side in a pan and cook for two minutes over medium heat
- Take off heat and cut in half to enjoy!
