Chicken Greek Bowls

Ingredients
Greek Seasoned Chicken
- 3 chicken breasts
- 1 tbsp olive oil
- 1 tsp oregano
- 1 tsp basil
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 cup quinoa
Cucumber Salad
- 6 mini cucumbers chopped
- 8 oz package of cherry tomatoes chopped
- 1 tbsp olive oil
- 1 tsp lemon juice
- 1/2 red onion chopped
- salt to taste
Homemade Tzatiki
- 1 cucumber chopped
- 1 cup plain greek yogurt
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 2 tbsp dill
- 1 tbsp garlic minced
- salt to taste
Instructions
Chicken
- Cut chicken into small pieces
- Season chicken with seasonings and saute in a pan with olive oil until cooked through
Quinoa
- Cook accroding to package typically it says to boil 1 cup of quinoa with 2 cups of water for 15 minutes with a covered lid.
Cucumber salad
- Combine all ingredeints for the cucumber salad above and mix together
Tzatiki
- Combine ingredeints listed above in a bowl for tzatziki dip
Bowls
- Combine chicken, quinoa, cucumber salad, and tzatziki sauce in meal prep containers for the week.
