Caprese Meal Prep
Servings 4 Lunches
Ingredients
- 3 Chicken Breasts
- 3 tbsp Italian Seasoning
- 1 tsp Salt
- 2 Cups Mozzarella Balls cut in half
- 2 Cups Cherry Tomatoes
- 1 Cup Uncooked Quinoa
- 1/2 Cup Balsamic Vinaigrette
- 8 Leaves Basil
Instructions
- Wash and cut up chicken into small bite sized pieces
- Season with Italian seasoning and salt
- Add some olive oil to a pan and cook chicken in sauce pan over medium heat
- Cook 1 cup of quinoa in 2 cups of water or chicken broth in a medium covered pot
- Mix Together cut up cherry tomatoes, mozzarella, and salt in a separate bowl
- Add chicken, quinoa, and caprese mixture to 4 lunch containers and top with balsamic vinaigrette
