Instructions
Wash and cut up chicken into small bite sized pieces
Season with Italian seasoning and salt
Add some olive oil to a pan and cook chicken in sauce pan over medium heat
Cook 1 cup of quinoa in 2 cups of water or chicken broth in a medium covered pot
Mix Together cut up cherry tomatoes, mozzarella, and salt in a separate bowl
Add chicken, quinoa, and caprese mixture to 4 lunch containers and top with balsamic vinaigrette
