Preheat oven to 425
2. Cover chicken with Italian seasoning, garlic powder, salt and pepper and spray with avocado oil
3. Bake for 25 minutes (if they are chicken breasts cut them in half)
4. Add one cup uncooked pearled couscous to 1.5 cups water and simmer for 8 mins until cooked
5. When cooked add 2 tbsp pesto and mix together
6. Cut cooked chicken into small pieces
7. Add ingredients together for bruschetta listed above (also add in cooked chicken)
8. Mix until well combined
9. Divide bruschetta chicken and pearled couscous into four meal prep containers
10. Enjoy heated up throughout the week
