Caprese Meal Prep

Ingredients

  • 3 Chicken Breasts
  • 3 tbsp Italian Seasoning
  • 1 tsp Salt
  • 2 Cups Mozzarella Balls cut in half
  • 2 Cups Cherry Tomatoes
  • 1 Cup Uncooked Quinoa
  • 1/2 Cup Balsamic Vinaigrette
  • 8 Leaves Basil

Instructions

  • Wash and cut up chicken into small bite sized pieces
  • Season with Italian seasoning and salt
  • Add some olive oil to a pan and cook chicken in sauce pan over medium heat
  • Cook 1 cup of quinoa in 2 cups of water or chicken broth in a medium covered pot
  • Mix Together cut up cherry tomatoes, mozzarella, and salt in a separate bowl
  • Add chicken, quinoa, and caprese mixture to 4 lunch containers and top with balsamic vinaigrette
