Healthier Tuscan Chicken Pasta Meal Prep

Ingredients
Sauce: Blend Together
- 1 cup cottage cheese when you blend it together it tastes like mozzarella cheese sauce
- 1/4 cup Parmesan cheese
- 1 garlic clove
- Salt
- Pepper
- Onion powder
Others
- 1/4 cup sun dried tomatoes drained
- 4 cups spinach
- 16 oz pasta
- 6 chicken tenders
- Italian seasoning
Instructions
- Blend together ingredients for sauce and pour into a sauce pan
- Boil water and cook pasta according to package, set aside but save 1/4 cup pasta water
- Add spinach, sun dried tomatoes, and pasta water to sauce and cook over medium heat until well combined
- Cut chicken into small bite sized pieces and cover with Italian seasoning
- Add chicken to a pan with olive oil and cook until cooked through
- Add noodles and chicken to the sauce mixture and mix together until combined
- Divide into four meal prep containers and top with parm cheese
