Healthier Tuscan Chicken Pasta Meal Prep

Servings 4 Lunches

Ingredients

Sauce: Blend Together

  • 1 cup cottage cheese when you blend it together it tastes like mozzarella cheese sauce
  • 1/4 cup Parmesan cheese
  • 1 garlic clove
  • Salt
  • Pepper
  • Onion powder

Others

  • 1/4 cup sun dried tomatoes drained
  • 4 cups spinach
  • 16 oz pasta
  • 6 chicken tenders
  • Italian seasoning

Instructions

  • Blend together ingredients for sauce and pour into a sauce pan
  • Boil water and cook pasta according to package, set aside but save 1/4 cup pasta water
  • Add spinach, sun dried tomatoes, and pasta water to sauce and cook over medium heat until well combined
  • Cut chicken into small bite sized pieces and cover with Italian seasoning
  • Add chicken to a pan with olive oil and cook until cooked through
  • Add noodles and chicken to the sauce mixture and mix together until combined
  • Divide into four meal prep containers and top with parm cheese
