Cut chicken breast into bite sized pieces and season with the seasonings above (paprika, onion powder, garlic powder, chili powder, and cumin)
Cook chicken in a pan with some olive oil and the shallot until fully cooked
Boil water and cook pasta
While pasta is cooking in a separate pan add ingredients to make sauce.
SAUCE: Over medium heat add tomato paste, pasta water, whipped cream cheese, and sun dried tomatoes
Combine sauce, chicken and drained pasta
Mix in spinach and arugula and stir together
Separate pasta into four meal prep containers and top with parmesan cheese
