Date and Cornbread Salad Meal Prep

Ingredients
Salad Base
- Arugula
- Goat Cheese
- Sweet & Spicy Pecans from Trader Joe’s
- Champagne Vinaigrette
- Cornbread
- Chicken
- Pitted and chopped Dates
Champagne Vinaigrette
- 1/3 cup champagne vinegar
- 2/3 cup olive oil
- 1 tsp Dijon mustard
- 1 tbsp honey
- 1 small shallot or 1 clove garlic
- Salt & pepper to taste
Corn Bread Croutons
- Cornbread
- Avocado Oil Spray
- Salt
Instructions
- Place ingredients for salad in four separate salad containers
- Mix together ingredients for salad dressing in jar and shake until combined
- Chicken- cut into small pieces and season with oregano, salt, pepper, garlic powder, parsley, onion powder. Cook in a pan with olive oil until cooked through
Cornbread Croutons
- Cook cornbread the day before or buy a premade one
- Cut into cubes and cover with avocado oil spray

- Add to salads and enjoy throughout the week
