Pesto Taquitos

Servings 8 taquitos

Ingredients

  • 2.5 cup shredded chicken I used a rotisserie chicken
  • 1/4 cup plain Greek yogurt
  • 1/4 cup mozzarella cheese
  • 1/4 cup pesto of choice
  • Garlic powder
  • Onion Powder
  • Salt & Pepper
  • 8 almond flour wraps
  • Avocado oil spray

Instructions

  • Add Greek yogurt, pesto, cheese, and seasonings to chicken and combine
  • Heat up almond flour tortillas in the microwave for 30 seconds (if you skip this step they will break when folding)
  • Layer pesto chicken mixture inside the tortilla and fold
  • Set aside until all are folded
  • Place them in the air fryer, spray with avocado oil, and air fry at 350 for 8-10 mins. (If you don’t have an air fryer bake in oven at 350 for 20 mins)
