Zucchini Ground Turkey Meal Prep

Sometimes you have to stick to the basics to create a delisciousbut healthy lunch.

Ingredients

  • 3 zucchini chopped
  • t tbsp olive oil
  • 1 tbsp sea salt
  • 1 cup jasmine rice dry
  • 2 cups water
  • 1 lb ground turkey
  • 2 tbsp taco seasoning

Instructions

  • Cut up zuchinni and saute in a medium sauce pan with olive oil and sea salt for 10 minutes
  • While zuchini is cooking add ground turkey and taco seasoning to a seperate dish and cook over medium heat until cooked through
  • Place jasmine rice and water in a pot and bring to a simmer
  • Reduce the heat to low, and let the rice simmer for another 9 to 10 minutes, until all the water has been absorbed
  • Combine rice, zuchinni, and ground turkey into 4 meal prep containers!
