Ranch dressing of your choiceI used Trader Joe's buttermilk ranch
Chicken Seasoning (Measure with your heart)
Smoked paprika
Cayenne powder
Onion powder
Garlic powder
Pepper
Salt
Basil
Oregano
Dried thyme
Instructions
Preheat your oven to 400°F (200°C).
Cut the bacon into small pieces and lay them on one side of a sheet pan. On the other side, place the broccoli florets. Drizzle the broccoli with olive oil and sprinkle with salt.
Bake the bacon and broccoli in the preheated oven for about 20 minutes, flipping the bacon halfway through.
Rinse the quinoa under cold water.
In a small pot, combine the rinsed quinoa and water. Bring to a boil, then reduce the heat to low and simmer for about 8 minutes, or until the water is absorbed.
Cut the chicken breasts into small pieces.
In a bowl, combine the chicken seasoning ingredients listed above.
Heat some olive oil in a saucepan and add the seasoned chicken. Sauté until the chicken is cooked through.
Divide the cooked chicken, crumbled bacon (2 pieces per container), and 1/2 cup of cooked quinoa into four separate meal prep containers.
Drizzle ranch dressing over the chicken, bacon, and quinoa in each container. Alternatively, you can add a small dressing container with ranch dressing to add on the day of consumption.
Seal the meal prep containers and refrigerate.
Reheat and enjoy the Chicken Bacon Ranch Meal Prep throughout the week.
