White Chicken Chili
Ingredients
- 3 cans white northern beans
- 3 chicken breasts cooked and shredded
- 2 4oz cans mild chopped green chilis
- 4 cups chicken stock
- 2 medium yellow onions chopped
- 1 tbsp olive oil
- 2 tsp cumin
- 1/4 tsp cayenne
- 1 tsp oregano
- 4 garlic cloves minced
Instructions
- Add olive oil and chopped onion and garlic to a large pot and cook over medium heat until onions become translusent
- Add spices and cook for three minutes
- Add everything else and simmer for 15 minutes
- Optional step for extra creaminess (add a half cup of monterey jack cheese and summer with chili)
- Serve with corn bread or toppings of choice (I love to add a scoop of plain greek yogurt to the top of mine)
