Thai Chicken Lettuce Wraps

Ingredients
Lettuce Wrap Filling
- 1 lbs ground chicken
- 3 tbsp coconut aminos
- 1 tsp sriracha
- 1 tbsp fresh or pickled ginger
- 1 tbsp garlic minced
- 1 cup stir fry vegetables chopped (I used a frozen blend)
- 3/4 cup jasmine rice
- 1/4 cup green onion chopped
- 1 head butter lettuce for lettuce wrap
Peanut Sauce
- 1/4 cup peanut butter softened
- 4 tbsp coconut aminos
- 1/2 lime juiced
- 1/2 tbsp rice vinegar
- 1 tsp honey
- 1/2 tsp sriracha
- 1 tsp water
Instructions
Lettuce Wrap Filling
- Cook ground chicken in sauce pan with olive oil
- Once chicken is cooked add veggies listed above for filling and cooked rice and heat over medium heat until cooked through
- Assemble lettuce wraps when cooked
Peanut Sauce
- While lettuce wrap filling is cooking stir together ingredients for peanut sauce
- Once peanut sauce is well combines, serve with lettuce wraps.
