Protein Pumpkin Pancake Meal Prep
Per container:
- 1/2 cup protein pancake mix
- 3/4 scoop vanilla protein
- dash of cinnamon
- 1/4 tsp baking powder
- 1/4 cup pumpkin puree
- 1/2 cup milk
- splash of vanilla extract
- Optional: chocolate chips
- Combine ingredients above except for chocolate chips into a sprayed glass oven safe container (I use 28oz)
- Mix until pancake consistency and top with chocolate chips
- Bake at 350 for 20 minutes or microwave for 2 minutes
- Enjoy in the fridge for 3-4 days. Reheat for 45seconds-1 minutes to enjoy
- Top with vanilla Greek yogurt or maple syrup!

Easy No-Bake Date Energy Bites
Ingredients:
- 2 cups oats (or oat flour)
- 1 cup pitted dates
- 1 cup almond butter
- 1.5 scoops vanilla protein powder
- 1/2 cup honey
- 1/4 cup dark chocolate chips
- 1 tsp coconut oil
Instructions:
- Make the oat flour: Blend oats in a food processor until they turn into a fine flour. (Skip this step if youโre using oat flour.)
- Combine ingredients: Add the pitted dates, almond butter, protein powder and honey to the oat flour. Process or mix until a dough forms. If the dough is too sticky, add more oats. If itโs too dry, add a little water.
- Form balls: Roll the dough into bite-sized balls.
- Melt the chocolate: In a small bowl, melt the dark chocolate chips and coconut oil together.
- Drizzle & set: Drizzle the melted chocolate over the balls and let them set in the fridge for about 20 minutes.
Pesto Sheet Pan Meal Prep

Pesto Chicken Sausage Sheet Pan Meal Prep
Ingredients (for 4 meals):
– 4 chicken sausages (regular or flavored)
– 2 cups cherry tomatoes
– 3 cups broccoli florets
– 1 red onion, cut into wedges
– 5 tbsp pesto (divided)
– 1 tbsp olive oil
– Salt and pepper
– 1 cup dry brown rice
– 2 cups bone broth
Instructions:
1. Cook the brown rice:
– Bring 2 cups bone broth to a boil.
– Add 1 cup brown rice, reduce heat, cover, and simmer for 35-40 minutes. Fluff and set aside.
2. Preheat oven to 400ยฐF.
3. Toss ingredients:
– Toss cherry tomatoes, broccoli, onions, and sausages with 1 tbsp olive oil, 2 tbsp pesto, salt, and pepper on a sheet pan.
4. Roast for 20-25 minutes.
5. Toss with pesto:
– Remove from oven and toss everything with 3 tbsp pesto.
6. Meal prep:
– Divide brown rice (about 1/2 cup per container) into 4 containers. Add 1 sausage and veggies to each.
Reheating:
– Microwave: 1-2 minutes.
– Oven: 350ยฐF for 10-12 minutes.
Enjoy within 4 days!
