Bagel Egg Bake

Bagel Egg Bake Casserole

Makes 6 servings

Ingredients

  • 5 cups cubed bagels (about 3 regular bagels)
  • 8 large eggs
  • 1 1/2 cups milk (any kind)
  • 1 cup shredded cheese 
  • 6 precooked chicken sausages. I like the jones brand. – cut up
  • 4 oz cream cheese, cubed
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and black pepper, to taste
  • 2 green onions, sliced (for topping)

Instructions

  1. Preheat oven to 350°F and grease a 9×13-inch baking dish.
  2. Spread cubed bagels evenly in the dish.
  3. Whisk together eggs, milk, garlic powder, onion powder, salt, and pepper.
  4. Pour egg mixture over bagels and add cut up chicken sausages and gently press down so they soak.
  5. Sprinkle with shredded cheese and dot cream cheese cubes across the top.
  6. Bake uncovered for 30–35 minutes, until golden and set in the center.
  7. Top with sliced green onions before serving.

Apple Brie Wraps

Brie, Apple, Arugula & Turkey Wraps
 Makes 4 wraps

Ingredients

  • 4 Sonoma-style wraps
  • 8 oz sliced turkey breast
  • 4 oz brie cheese, sliced thin
  • 1 green apple thinly sliced
  • 2 cups arugula

Greek Yogurt Dijon Dressing

  • 1/4 cup plain Greek yogurt
  • 1 tsp Dijon mustard
  • 1 tsp balsamic vinegar
  • 1 tsp honey
  • Pinch of salt and pepper

Instructions

  1. In a small bowl, whisk together Greek yogurt, Dijon, balsamic, honey, salt, and pepper.
  2. Lay out wraps and layer turkey slices on each.
  3. Spread a spoonful of the dressing directly over the turkey (this helps prevent the wrap from getting soggy).
  4. Add slices of brie, apple, and a handful of arugula on top.
  5. Roll up tightly, slice in half if desired, and serve fresh or wrap in parchment for meal prep.

Pro Tip: Instead of putting the dressing right on the wap (like I did in the video) add the dressing between the turkey and cheese instead of on the wrap itself it keeps everything fresh and crisp, even if prepped ahead!

Apple Cider Chicken Skillet

Makes 4 servings

Ingredients

Apple Cider Chicken Skillet

  • 4 boneless skinless chicken thighs
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 medium onion, thinly sliced
  • 2 garlic cloves, minced
  • 1 cup apple cider (not vinegar)
  • 1/2 cup chicken broth
  • 1 tbsp Dijon mustard
  • 1 tsp fresh thyme (or 1/2 tsp dried)
  • Salt and black pepper
  • Optional: apple slices for garnish

Mashed Cauliflower Potatoes

  • 2 medium russet potatoes, peeled and cubed
  • 2 cups cauliflower florets
  • 2 tbsp butter
  • 1/4 cup milk
  • Salt and black pepper

Instructions

1. Boil potatoes and cauliflower until tender, 12–15 minutes. Drain, mash with butter and milk, season, and keep warm.

2. Season chicken with salt and pepper. Sear in olive oil and butter, 4 minutes per side. Remove.

3. Sauté onion and garlic in same skillet. Add cider, broth, Dijon, and thyme. Simmer 2 minutes.

4. Return chicken, cover, and cook 12–15 minutes until done.

5. Serve chicken over mashed cauliflower potatoes with sauce and apple slices.
