Homemade Simple Tomato Soup

Ingredients

Roasted Tomatoes

  • 6 roma tomatoes cut in half
  • 8 cloves garlic peeled
  • 3 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp pepper

Sauteed Ingredients

  • 1 large yellow onion diced
  • 1/2 tbsp olive oil
  • 1 6oz can tomato paste
  • 1/2 cup fresh basil leaves
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp dried oregano

Blended

  • 1/2 cup greek yogurt
  • 1 cup vegetable broth

Instructions

  • Preheat oven to 400°
  • Roast tomatoes, garlic, olive oil, and salt and pepper (roasted tomato ingredients above) in oven for 40 minutes.
  • While that is cooking cut up onion and add it to a medium size sauce pan with olive oil and saute over medium heatt
  • Add other sauteed ingredients above to cook with the onions (tomato paste, oregano, basil, salt & pepper)
  • When tomatoes are done roasting and onions are translucent, let ingredients cool for 10-20 minutes. (If you don’t allow ingredients to cool your blender will cause a huge mess when you blend it!)
  • Add roastedtomatoes and onion mixture to a food processor or blender, blend until smooth.
  • Transfer blended ingredients to a simmer pot. Add ½ cup of greek yogurt to thicken and 1 cup of broth. Stir together on medium heat.
  • Serve with grilled cheese (I used sourdough bread, and havarti cheese)
