Preheat oven to 400°
Roast tomatoes, garlic, olive oil, and salt and pepper (roasted tomato ingredients above) in oven for 40 minutes.
While that is cooking cut up onion and add it to a medium size sauce pan with olive oil and saute over medium heatt
Add other sauteed ingredients above to cook with the onions (tomato paste, oregano, basil, salt & pepper)
When tomatoes are done roasting and onions are translucent, let ingredients cool for 10-20 minutes. (If you don’t allow ingredients to cool your blender will cause a huge mess when you blend it!)
Add roastedtomatoes and onion mixture to a food processor or blender, blend until smooth.
Transfer blended ingredients to a simmer pot. Add ½ cup of greek yogurt to thicken and 1 cup of broth. Stir together on medium heat.
Serve with grilled cheese (I used sourdough bread, and havarti cheese)
