Healthier Tag-A-Long Girl Scout Cookies
Ingredients
Cookie
- 1 cup almond flour
- 3 tbsp maple syrup
- 1½ tbsp coconut oil melted
- 1 tsp vanilla extract
Peanut Butter Filling
- 4 tbsp peanut butter
- ½ tbsp maple syrup
- ½ tbsp honey
Chocolate topping
- 1 cup dark chocolate
- 1 tsp coconut oil
Instructions
Cookies
- Preheat oven to 350°
- Combine ingredients listed in the cookie section above
- Shape into balls and flatten on baking sheet
- Use your thumb to put a dent into the middle of each cookie for the peanut butter filling
- Do not put the peanut butter in yet, the cookie needs to be cooked first
- Bake for 13-15 minutes
- Allow them to completely cool before adding peanut butter filling
Peanut Butter Filling
- Combine peanut butter ingredients listed above to create the filling
- Add 1 tsp of the peanut butter filling to the center of each cookie
- Place in freexer for 15 minutes to cool cookies
Chocolate Coating
- After the freezer, melt the chocolate
- Combine your chocolate and coconut oil and microwave in increments of 30 seconds, stirring each time until melted
- Cover each cookie in chocolate by placing it in the bowl and using a spoon to cover it
- Once coated place cookies back in freezer for 20 minutes
- Take out and enjoy!
