Freezer Friendly Breakfast Burritos

Post Partum Meal Prep: Freezer-Friendly Breakfast Burritos (8 servings)

Ingredients:

  • 8 large flour tortillas
  • 1/2 lb ground pork sausage
  • 1/2 lb ground chicken sausage
  • 12 large eggs
  • 1/4 cup cottage cheeseย 
  • 1 1/2 cups shredded Mexican cheese blend
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste

Instructions:

1. Cook Sausage: Brown pork and chicken together in a skillet season with smoked paprika, garlic powder, onion powder, salt, and pepper. Drain and set aside.

2. Scramble Eggs: Whisk eggs. Add in 1/4 cup cottage cheese. Scramble in the skillet until cooked and season with salt and pepper. 

3. Assemble Burritos: Divide sausage, eggs, and cheese among heated tortillas (heat in microwave for 15 seconds before folding. Makes it easier). Roll tightly.

4. Freeze: Wrap in foil or parchment paper and freeze up to 3 months.

Reheat:

โ€ข Microwave: Unwrap, wrap in a damp paper towel, and heat 2-3 minutes.

โ€ข Air Fryer: Heat at 350ยฐF for 8-10 minutes.

โ€ข Oven: Bake at 375ยฐF for 25-30 minutes.

Post Partum Freezer Friendly Meal Prep: Egg Sandwiches

Makes 6

  • 6 English muffins
  • 1/4 cup butter, melted to brush on English muffinsย 
  • 10 eggs
  • 1/4 cup cottage cheese
  • 6 slices cheddar cheese

Maple Chicken Sausage Patties

  • 1 lb ground chicken
  • 1/4 cup maple syrup
  • 1 tsp Rosemary
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • Salt + Pepper
  1. In a blender add in cracked eggs and cottage cheese
  2. Blend until smooth
  3. Transfer to a parchment paper lined baking dish (spray the pan before adding parchment paper and itโ€™ll stick better)
  4. Bake at 350 for 30-35 minutes until cooked through middle
  5. While eggs are baking assemble your chicken sausage Pattieโ€™s
  6. Add ground chicken, spices, and maple syrup to a bowl. Mix and form into six Pattieโ€™s.ย 
  7. Cook stovetop over medium heat with a little olive oil for about 4 minutes on each side until no longer pink in center.ย 
  8. Remove from heat and set aside
  9. Set out English muffins on a sheet pan and brush melted butter on top
  10. Remove eggs from oven after cooked and let English muffins toast for 5 minutes in the oven
  11. Cut sandwich circles out of the eggs, enough for 6 sandwichesย 
  12. Assemble breakfast sandwiches with muffins, egg, cheese, and chicken sausage and store in parchment paper. Do not transfer to plastic bag until they have cooled and store in freezer.
  13. Air Fryer Reheating Instruction: (best in air fryer) From frozen: 350 for 10-12 mins flipping halfway through Not frozen: 350 for 5-6 mins flipping halfway

Postpartum Freezer Meal Prep Uncrustables

For 11-12 sandwiches
Ingredients:

  • 24 slices sandwich bread
  • 1 ยฝ cups peanut butter (or almond butter)
  • 1 ยฝ cups jam or fruit preserves
  • Optional: 1-2 tbsp chia seeds (mixed into jam)
  • Tools: round sandwich cutter

Instructions:

1. Spread 2-3 tbsp peanut butter on 12 slices of bread. Add 1-2 tbsp jam in the center.

2. Top with another slice of bread and seal with a round cutter.

3. Flash freeze on a parchment-lined baking sheet for 1-2 hours.

4. Transfer to freezer-safe bags or containers.

To Serve:

โ€ข Thaw at room temp (30-45 mins) or microwave for 20-30 secs.
