DILL PICKLE CHICKPEA SALAD
Hear me out on this one, if you like pickles you have to try this!

Ingredients
Base
- 1 English cucumber cut into fourths
- 1 large avocado
- 1 cup chickpeas drained and rinsed (shelled too if you have digestive issues)
- 1/2 shallot diced
- 1/4 cup chopped pickles
- Fresh Dill
Dressing
- 3 tbsp olive oil
- 2 tbsp red wine vinegar
- 1 tsp Dijon mustard
- – Garlic powder or minced garlic
- Salt & Pepper
Instructions
- Cut up veggies and mix together ingredients listed above for base
- In a jar mix together ingredients for dressing and shake until combined
- Pour dressing over base and mix until well combined
