Chicken Fajita Salads

Ingredients

  • 3 chicken breasts
  • 3 bell peppers
  • 1 yellow onion
  • 1 packet taco seasoning
  • 2 tbsp olive oil
  • salad mix for base

Mexican Greek Yogurt Dressing

  • 1 cup plain greek yogurt
  • 1/4 cup salsa
  • 1 tbsp taco seasoning saved from packet

Instructions

  • cut up your chicken into bite sized pieces or strips
  • sauté the chicken with 1/2 the taco seasoning packet and olive oil over medium heat until cooked through
  • while that is cooking…chop your peppers and onion!
  • sauté the veggies in a separate pan with olive oil and the other half of the taco seasoning (save some taco seasoning for the dressing if you don’t have extra)
  • sauté until softened and combine with the chicken
  • place meal prep containers out and line the bottom with spring mix
  • top salad with fajita mixture
  • blend up the ingredients for the dressing in a blender and stew in mason jar to use throughout the week
