Buffalo Turkey Meatball Meal Prep

Ingredients
Meatballs
- 1 lb Ground Chicken or Ground Turkey
- 1 Cup Almond Flour
- 1 Egg
- 1/4 Cup Chopped Green Onions
- 1 tsp Garlic Powder
Other Ingredients
- 2 Zuchinni Chopped into quarters
- 1 Cup Shredded Carrots
- 1 Packet Microwaveable Jasmine Rice
- 1/4 tsp Salt
- 1 Package Frozen Riced Cauliflower
- 1/2 Cup Buffalo Sauce of Choice (I used primal kitchen)
Instructions
- Mix together meatball ingredients above without the Buffalo sauce and form into balls (makes about 20 meatballs)
- Bake in oven at 400 for 20 minutes
- After baking transfer meatballs to a bowl and cover with Buffalo sauce of choice
- Microwave jasmine rice packet and riced cauliflower and combine in a bowl with some salt
- Cut up zucchini and sauté in a pan with shredded carrots. Topped with salt & avocado oil
- Cook for 6 minutes over medium heat, stirring as you cook
- Place rice mixture into 4 meal prep containers
- Add in zucchini and carrot mixture
- Place 5 meatballs into each container
- Optional: Drizzle more Buffalo sauce on top of meatballs
