Buffalo Chicken Orzo

Servings 4

Ingredients

  • 8 chicken tenders
  • 1 cup uncooked orzo
  • 1/2 cup chopped celery
  • 1/2 cup shredded carrots
  • 1/2 cup Buffalo sauce @primalkitchenfoods
  • 1/4 cup Greek yogurt ranch or @tobysfamilyfoods
  • 1/2 cup cherry tomatoes
  • 1/4 cup Greek onions

Instructions

  • Cut up chicken tender and sauté in large sauce pan with some olive oil
  • Add 2 cups water to a medium pot and add orzo
  • Simmer until cooked
  • Cut up celery, green onions, and tomatoes
  • Mix together cooked chicken, orzo, celery, cherry tomatoes, green onions, shredded carrots
  • Top with Buffalo sauce and ranch
  • Mix until coated
  • Divide into four meal preps and enjoy throughout the week.
