BLT Pasta Salad Meal Prep

Servings 4 Lunches

Ingredients

  • 8 Oz Protein Pasta of Choice
  • 1/2 Cup Pearled Mozzarella Balls
  • 8 Pieces Bacon
  • 4 Cups Arugula
  • 1 Cupp Cherry Tomatoes Cut in half

Sauce

  • 1/8 Cup Avocado Oil Mayonnaise
  • 1/4 Cup Pesto
  • Pepper

Instructions

  • Boil water and cook pasta according to package
  • Cut up bacon into small pieces and sauté in a pan until cooked through, drain grease and pat bacon dry with a paper towel
  • Cut cherry tomatoes in half
  • Mix together ingredients for dressing
  • Combine noodles, bacon, mozzarella balls, arugula, and cherry tomatoes
  • Mix in sauce and combine
  • Divide into 4 meal prep containers
  • Enjoy heated up or cold throughout the week
