Bang Bang Chicken Meal Prep

Ingredients
- 3 chicken breasts
- 1 cup uncooked jasmine rice makes two cups cooked
- 2 cups shredded carrots
- 2 cups shredded purple cabbage
- Salt
- Pepper
- Paprika
- 3 tbsp Corn starch or tapioca flour
Sauce
- 1/4 cup mayonnaise
- 1 tbsp sriracha
- 2 tsp Dijon
- 2 tsp Worcester sauce
Instructions
- Cut chicken into bite sized pieces and season with salt, pepper, paprika and coat with corn starch or tapioca flour
- Add seasoned chicken to a pan with some olive oil and cook over medium heat until chicken is cooked through
- In separate pot add one cup of rice and two cups of water, simmer for 8 mins until cooked through (makes two cups cooked)
- In another pan add shredded carrots and cabbage to a pan with olive oil and season with salt
- Mix together ingredients for sauce in a dish
- Drain extra water from the chicken and cover chicken in sauce
- Divide rice, carrots, cabbage, and chicken into four meal prep containers and eat throughout the week
- Heat up for 1 minutes before eating
