Bang Bang Chicken Meal Prep

Ingredients

  • 3 chicken breasts
  • 1 cup uncooked jasmine rice makes two cups cooked
  • 2 cups shredded carrots
  • 2 cups shredded purple cabbage
  • Salt
  • Pepper
  • Paprika
  • 3 tbsp Corn starch or tapioca flour

Sauce

  • 1/4 cup mayonnaise
  • 1 tbsp sriracha
  • 2 tsp Dijon
  • 2 tsp Worcester sauce

Instructions

  • Cut chicken into bite sized pieces and season with salt, pepper, paprika and coat with corn starch or tapioca flour
  • Add seasoned chicken to a pan with some olive oil and cook over medium heat until chicken is cooked through
  • In separate pot add one cup of rice and two cups of water, simmer for 8 mins until cooked through (makes two cups cooked)
  • In another pan add shredded carrots and cabbage to a pan with olive oil and season with salt
  • Mix together ingredients for sauce in a dish
  • Drain extra water from the chicken and cover chicken in sauce
  • Divide rice, carrots, cabbage, and chicken into four meal prep containers and eat throughout the week
  • Heat up for 1 minutes before eating
