Pesto Taquitos
Servings 8 taquitos
Ingredients
- 2.5 cup shredded chicken I used a rotisserie chicken
- 1/4 cup plain Greek yogurt
- 1/4 cup mozzarella cheese
- 1/4 cup pesto of choice
- Garlic powder
- Onion Powder
- Salt & Pepper
- 8 almond flour wraps
- Avocado oil spray
Instructions
- Add Greek yogurt, pesto, cheese, and seasonings to chicken and combine
- Heat up almond flour tortillas in the microwave for 30 seconds (if you skip this step they will break when folding)
- Layer pesto chicken mixture inside the tortilla and fold
- Set aside until all are folded
- Place them in the air fryer, spray with avocado oil, and air fry at 350 for 8-10 mins. (If you don’t have an air fryer bake in oven at 350 for 20 mins)
