White Chicken Chili

Ingredients
- 2 cans of white northern beans drained and rinsed
- 3 chicken breasts- cooked and shredded
- 2 4 oz cans mild chopped green Chili’s
- 1 can corn drained and rinsed
- 4 garlic cloves minced
- 1 large yellow onion chopped
- 2 tsp cumin
- 1/4 tsp cayenne
- 1 tsp oregano
- 4 cups chicken stock
- 1 tbsp olive oil
Instructions
- Add olive oil and onion to large pot, cook until translucent
- Add spices and cook for three minutes add everything else and simmer for 15 minutes (optional to add half a cup of Monterey jack cheese to simmer with chili makes it more creamy)
- Top with your favorite toppings like plain Greek yogurt, avocado, jalapeños, cheese, and Fritos
