Walnut Chickpea Quinoa Salad

Ingredients
- 1 Cup Uncooked Quinoa
- 2 Cups Chicken Broth or Water
- 1/4 Cup Chopped Parsley
- 1 Lemon, Juiced
- 1/8 Cup Olive Oil
- 1/2 tsp Salt
- 1/2 tsp Garlic Powder
- 1/4 Cup Chopped Walnuts
- 1/2 Cup Feta Cheese
- 1 Medium English Cucumber, cut into fourths
- 1/2 Red Onion
- 1 Can Chickpeas
Instructions
- Cook quinoa in chicken broth or water over medium flame and allow it to simmer for about 8 minutes until fully cooked
- Chop up veggies and set aside
- Add quinoa, veggies, chickpeas, seasonings, and olive oil and lemon juice to a dish
- Mix together and serve throughout the week!
