Hashbrown Egg Bowls
Hashbrown Egg Bowls

Ingredients
- 4 Trader Joe’s hashbrown patties
- 8 eggs, scrambled
- Salt and pepper, to taste
- 1/2 cup shredded cheese
- 1 cup pico de gallo
Instructions
- Cook hashbrown patties according to package instructions and place one patty in each meal prep container.
- In a bowl, scramble 8 eggs, seasoning with salt and pepper, then mix in the shredded cheese.
- Layer the scrambled eggs on top of each hashbrown patty.
- Top each bowl with pico de gallo.
- Store in the fridge. Reheat before eating if desired.
Avocado Toast Meal Prep

Ingredients
- 8 slices bread (your choice)
- 4 avocado packets (Trader Joe’s or similar)
- 8 eggs
- Everything bagel seasoning
Instructions
- Place eggs in a pot of water. Bring to a boil, then cook for 8 minutes.
- Remove eggs, let cool, then peel.
- Divide the boiled eggs, 2 per box. Add 2 slices of bread and 1 avocado packet to each box. Sprinkle eggs lightly with everything bagel seasoning.
- Store boxes in the fridge. When ready to eat, toast the bread at school and top with the avocado packet and boiled eggs to make fresh avocado toast.
Thai Peanut Jar Salads
Thai Peanut Jar Salads

Ingredients
- 2 cups Trader Joe’s Just Chicken, cooked and cut into small pieces
- 3–4 tbsp Trader Joe’s Thai Peanut Salad Dressing per jar (use up to 5 tbsp if you like it saucy)
- 1 English cucumber, diced
- 1 cup shelled edamame
- 4 cups coleslaw mix
- 1/2 cup cashews
Instructions
- Add 3–4 tbsp dressing to the bottom of each jar.
- Layer 1/2 cup chicken pieces on top of the dressing in each jar.
- Add 1 cup coleslaw mix, then 1/4 cup edamame, and diced cucumber to each jar.
- Top each jar with cashews.
- Store jars in the fridge. When ready to eat, shake the jar to distribute the dressing and enjoy!
Greek Meatball Bowls
Greek Chicken Meatball Bowls

Ingredients
- 1 container Trader Joe’s refrigerated chicken meatballs (16 total, 4 per container)
- 1 can Trader Joe’s Greek Chickpeas with Cumin and Parsley
- 1 English cucumber, diced
- 2 cups cherry tomatoes, halved
- 1/2 cup feta cheese, crumbled
- Optional: 1/4 cup red onion, diced
Instructions
- In a bowl, mix cucumber, cherry tomatoes, feta, and red onion (if using) to make a simple salad.
- Divide the Greek chickpeas evenly into 4 meal prep containers.
- Add the cucumber-tomato-feta salad to each container.
- Top each container with 4 chicken meatballs from the Trader Joe’s container.
- Store in the fridge. Eat cold or reheat the meatballs before eating, if desired.
