Thai Chicken Lettuce Wraps

Servings 3 people

Ingredients

Lettuce Wrap Filling

  • 1 lbs ground chicken
  • 3 tbsp coconut aminos
  • 1 tsp sriracha
  • 1 tbsp fresh or pickled ginger
  • 1 tbsp garlic minced
  • 1 cup stir fry vegetables chopped (I used a frozen blend)
  • 3/4 cup jasmine rice
  • 1/4 cup green onion chopped
  • 1 head butter lettuce for lettuce wrap

Peanut Sauce

  • 1/4 cup peanut butter softened
  • 4 tbsp coconut aminos
  • 1/2 lime juiced
  • 1/2 tbsp rice vinegar
  • 1 tsp honey
  • 1/2 tsp sriracha
  • 1 tsp water

Instructions

Lettuce Wrap Filling

  • Cook ground chicken in sauce pan with olive oil
  • Once chicken is cooked add veggies listed above for filling and cooked rice and heat over medium heat until cooked through
  • Assemble lettuce wraps when cooked

Peanut Sauce

  • While lettuce wrap filling is cooking stir together ingredients for peanut sauce
  • Once peanut sauce is well combines, serve with lettuce wraps.
