Tahini Farro Meal Prep

Ingredients
- 1.5 cups uncooked farro I used a whole blue bag from Trader Joe’s
- 3 cups water
- 1 can chickpeas drained and rinsed
- 1/2 red onion
- 1 English cucumber
- 1 cup cherry tomatoes
- Mint leaves
Dressing
- 1/4 cup tahini
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- Juice from two lemons
- Salt
- Pepper
- Garlic Powder
Instructions
- Add water and farro to a pot and boil for 10 minutes or follow directions from bag
- Drain and rinse chickpeas
- Cut up cucumber, cherry tomatoes, red onion, and mint
- Mix together farro, cucumber, cherry tomatoes, red onion, and mint
- Combine the ingredients for dressing and shake in a mason jar to mix together
- Pour over farro mixture and stir
- Divide into four meal prep contrariness and enjoy throughout the week
