Tahini Farro Meal Prep

Servings 4

Ingredients

  • 1.5 cups uncooked farro I used a whole blue bag from Trader Joe’s
  • 3 cups water
  • 1 can chickpeas drained and rinsed
  • 1/2 red onion
  • 1 English cucumber
  • 1 cup cherry tomatoes
  • Mint leaves

Dressing

  • 1/4 cup tahini
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • Juice from two lemons
  • Salt
  • Pepper
  • Garlic Powder

Instructions

  • Add water and farro to a pot and boil for 10 minutes or follow directions from bag
  • Drain and rinse chickpeas
  • Cut up cucumber, cherry tomatoes, red onion, and mint
  • Mix together farro, cucumber, cherry tomatoes, red onion, and mint
  • Combine the ingredients for dressing and shake in a mason jar to mix together
  • Pour over farro mixture and stir
  • Divide into four meal prep contrariness and enjoy throughout the week
