Southwest Sweet Potato Hash Meal Prep

Ingredients
- - 2 large sweet potatoes
- - 1lb grass fed ground beef or ground Turkey
- - 1/2 yellow onion
- - 1 can corn drained and rinsed
- - 1 can black beans drained and rinsed
- - 1 small can green chilis
- - 1 can diced tomatoes
- - 1 packet taco seasoning
- - Olive oil
- Toppings:
- Cheese
- Cilantro
- Avocado
Instructions
- Add ground beef to a pan with 1/2 packet taco seasoning and olive oil, cook over medium heat until fully cooked through
- Set aside
- Cut up sweet potatoes into small pieces, the smaller the pieces the easier it cooks
- Add sweet potato to an olive oil lined pan with corn, black beans, green chilis, onion, diced tomatoes, and other half of taco seasoning
- Mix, Cover, and simmer on medium heat for 15-20 minutes, until sweet potatoes are soft.
- Once sweet potatoes are soft add ground beef to mixture and mix together
- Divide into four meal prep containers
- Top with cheese, cilantro, and avocado (add avocado day of before eating so it doesn’t brown)
- Microwave for 45 seconds before eating and enjoy throughout the week
