Sesame Tahini Quinoa Meal Prep
Ingredients
Base
- 2.5 cups quinoa
- 1 can chickpeas drained and rinsed (de shell if you get bloated easily)
- 1 cup shredded carrots
- 1 cup shredded purple cabbage
- 1/2 cup green onions cut up
- 2 bell peppers chopped into small pieces
Sauce
- 1/4 cup tahini
- 1/4 cup water
- 3 tbsp coconut aminos or soy sauce
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 Tsp garlic
- 1/2 tsp sriracha can use more if you want more spice
- Mix together to create sauce
Instructions
- Combine ingredients for base
- Mix together sauce in a mason jar on the side and shake until well combined
- Pour over quinoa base
- Mix together
- Divide into four meal prep containers
- Top with green onions and sesame seeds
- Enjoy hot or cold throughout the week, I like mine heated up a bit but this can be eaten cold.
