Red Pepper Chicken Meal Prep
Ingredients
- 3 Chicken Breasts
- 1 tbsp Olive Oil
- 1 Cup Uncooked Pearled Couscous (I used neareast olive oil and garlic one)
- 1 Seedless Cucumber
- 1 Cup Cherry Tomatoes
- 1/4 Red Onion
- 1/2 Block Feta (in brine)
Red Pepper Sauce
- 1 Cup Jarred Red Bell Pepper Drained
- 1/3 Cup Chicken Stock
- 1/4 Cup Grated Parmesan Cheese
- 1/4 Cup Fresh Basil
- 6 oz Low Fat Cream Cheese
Instructions
- Cook chicken in pan over medium heat with olive oil, salt, and pepper until cooked through
- While chicken is cooking chop up your cucumbers, tomatoes, red onion and add to a bowl with some salt
- Cook pearled couscous according to package
- Let it cool a little and then add it to cucumber tomato mixture and stir
- Make red pepper sauce by mixing together ingredients under red pepper sauce and blending it in a blender until smooth
- Assemble bowl with couscous salad, feta, chicken, and top chicken with red pepper sauce
- Store in fridge for 4 days. If storing longer, put in freezer for best keep
- On the day of eating it. Heat in microwave for 30 seconds. Mix and microwave for 30 more seconds!
