Homemade Simple Tomato Soup
Ingredients
Roasted Tomatoes
- 6 roma tomatoes cut in half
- 8 cloves garlic peeled
- 3 tbsp olive oil
- 1/4 tsp salt
- 1/4 tsp pepper
Sauteed Ingredients
- 1 large yellow onion diced
- 1/2 tbsp olive oil
- 1 6oz can tomato paste
- 1/2 cup fresh basil leaves
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2 tsp dried oregano
Blended
- 1/2 cup greek yogurt
- 1 cup vegetable broth
Instructions
- Preheat oven to 400°
- Roast tomatoes, garlic, olive oil, and salt and pepper (roasted tomato ingredients above) in oven for 40 minutes.
- While that is cooking cut up onion and add it to a medium size sauce pan with olive oil and saute over medium heatt
- Add other sauteed ingredients above to cook with the onions (tomato paste, oregano, basil, salt & pepper)
- When tomatoes are done roasting and onions are translucent, let ingredients cool for 10-20 minutes. (If you don’t allow ingredients to cool your blender will cause a huge mess when you blend it!)
- Add roastedtomatoes and onion mixture to a food processor or blender, blend until smooth.
- Transfer blended ingredients to a simmer pot. Add ½ cup of greek yogurt to thicken and 1 cup of broth. Stir together on medium heat.
- Serve with grilled cheese (I used sourdough bread, and havarti cheese)
