Fall Orzo Meal Prep

Ingredients

  • 1 cup uncooked orzo
  • 3 cups water
  • 2 bags shaved Brussel sprouts
  • 2 cups butternut squash
  • 1/2 mini log of goat cheese
  • 5 oz packet of Diced prosciutto or pancetta
  • Olive oil
  • Salt & Pepper
  • Dressing:
  • 1/4 cup olive oil
  • 1/8 cup water
  • 1 tsp Dijon mustard
  • 1 tbsp maple syrup
  • Salt
  • Pepper
  • Onion Powder

Instructions

  • Preheat oven to 350
  • Coat Brussels and butternut squash cubes with olive oil, salt, and pepper
  • Bake for 45 minutes
  • Add orzo to a pot with 3 cups water and cook for 8 minutes until liquid is absorbed
  • While that is cooking add prosciutto to a small pan and sauté until browned
  • In a mason jar mix together dressing
  • Mix together veggies, orzo, goat cheese, and prosciutto
  • Cover with dressing mixture and mix together until orzo salad is coated with dressing
  • Divide into four meal prep containers and enjoy
  • I heat mine up for a 1 min and 30 seconds before I eat! So I eat it hot but you can also eat it cold.
