Date and Cornbread Salad Meal Prep

Ingredients

Salad Base

  • Arugula
  • Goat Cheese
  • Sweet & Spicy Pecans from Trader Joe’s
  • Champagne Vinaigrette
  • Cornbread
  • Chicken
  • Pitted and chopped Dates

Champagne Vinaigrette

  • 1/3 cup champagne vinegar
  • 2/3 cup olive oil
  • 1 tsp Dijon mustard
  • 1 tbsp honey
  • 1 small shallot or 1 clove garlic
  • Salt & pepper to taste

Corn Bread Croutons

  • Cornbread
  • Avocado Oil Spray
  • Salt

Instructions

  • Place ingredients for salad in four separate salad containers
  • Mix together ingredients for salad dressing in jar and shake until combined
  • Chicken- cut into small pieces and season with oregano, salt, pepper, garlic powder, parsley, onion powder. Cook in a pan with olive oil until cooked through

Cornbread Croutons

  • Cook cornbread the day before or buy a premade one
  • Cut into cubes and cover with avocado oil spray
  • Cut into cubes and cover with avocado oil spray
  • Add to salads and enjoy throughout the week
