Crockpot Tortilla Soup

This is the perfect recipe for a cold winter day that will be ready by the time you get home from work!

 

You can make it in a crockpot or stovetop if the chicken is previously cooked and shredded.

Crockpot Tortilla Soup

Servings 5

Ingredients

  • 2 Large Chicken Breasts
  • 1 Can Fire roasted diced tomatoes
  • 2 Cans Green Chilis
  • 4 Cups Chicken Broth
  • 1 Can Corn drained and rinsed
  • 1 Can Black beans drained and rinsed
  • 1/4 Block Cream Cheese
  • 1 Packet Taco Seasoning
  • 1 Bell Pepper chopped into small pieces
  • 1/2 Yellow Onion Diced

Instructions

  • -Add all ingredients above to a crockpot and cook on low for 6 hours or high for 3 hours
  • -Remove chicken and shred after cooked, add back to soup and serve
  • -Top with sour cream, plain Greek yogurt, cheese, and tortilla chips
