Collagen Oatmeal Peanut Butter Cups
Ingredients
Peanut Butter Oat Base
- 1 cup peanut butter
- 1/2 cup maple syrup
- 1 cup oats
- 1/4 cup collagen Can be replaced with protein powder or omitted all together
- pinch salt
Chocolate Top Layer
- 3/4 cup dark chocolate dairy free
- 1 tsp coconut oil
- 1 tsp sea salt flakes
Instructions
Peanut Butter Oat Base
- Heat peanut butter in a microwave safe bowl for 20 seconds to soften
- Combine all ingredients above in a bowl
- Scoop a spoonful of the mixture into the bottom of a muffin tray and press down
- Makes about 11 cups depending on how much peanut butter base you put in each cup
- Place in freezer for 1 hour to harden the base
Chocolate Top Layer
- Melt chocolate and coconut oil in the microwave, microwaving for increments of 45 seconds and stirring each time
- Add chocolate to the top of each cup and top with sea salt
- Place back in freezer for 30 minutes
- Remove from freezer and let thaw for 5 mintues before eating, enjoy!
- Store in fridge
