Buddha Bowl
Servings 2 Bowls
Ingredients
- 1 sweet potato
- 2 chicken sausages
- 1 pepper
- 1 zucchini
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp garlic powder
- 1/4 tsp pepper
Maple Tahini Sauce
- 2 tbsp olive oil
- 2 tbsp tahini
- 1 tsp Dijon mustard
- 2 tsp lemon juice
- 1 tsp maple syrup
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 tbsp water can add more
Instructions
- Cut up veggies and chicken sausage and coat in olive oil and seasonings
- Add to a pan and bake at 350 for 35 minutes
- Blend together maple tahini sauce in blender
- Serve over arugula and top with desired amount of sauce and top with avocado.
