Bruschetta Chicken Meal Prep
Ingredients
- 5 chicken thighs or 3 chicken breasts
- Italian seasoning
- Garlic Powder
- Salt & Pepper
Bruschetta
- 2 cups cherry tomatoes cut in half
- 1/4 cup Parmesan cheese
- 1/8 cup cup up basil
- 1/4 cup red onion cut into small pieces
- 1 tsp Minced Garlic
- Salt & Pepper
- 2 tbsp olive oil
- 2 tbsp balsamic
Instructions
- Preheat oven to 425
- 2. Cover chicken with Italian seasoning, garlic powder, salt and pepper and spray with avocado oil
- 3. Bake for 25 minutes (if they are chicken breasts cut them in half)
- 4. Add one cup uncooked pearled couscous to 1.5 cups water and simmer for 8 mins until cooked
- 5. When cooked add 2 tbsp pesto and mix together
- 6. Cut cooked chicken into small pieces
- 7. Add ingredients together for bruschetta listed above (also add in cooked chicken)
- 8. Mix until well combined
- 9. Divide bruschetta chicken and pearled couscous into four meal prep containers
- 10. Enjoy heated up throughout the week
