Sweet Potato Fry Meal Prep
Ingredients
- 2 Large Sweet Potatoes Cut into Fry Shape (You can use regular potatoes as well)
- 1 lb Ground Turkey
- 1 Packet Taco Seasoning
- 2 tbsp Olive Oil
- 1 Can Black Beans Drained and Rinsed
- 1/2 Yellow Onion Diced
- 1/2 Cup Shredded Cheese
- 1 Jalapeno Cut into pieces
- 1/2 Cup Cherry Tomatoes Cut in half
- 1/4 Cup Chopped Cilantro
- 1/2 Cup Plain Greek Yogurt or Sour Cream
Instructions
- Preheat oven to 400
- Cut up sweet potatoes into fries and cover with 1 tbsp of olive oil and 1/4 the packet of taco seasoning
- Place on a lined baking sheet and spread out. Bake for 35 minutes until softened
- While sweet potatoes are cooking add a tsp of olive oil to a pan and sauté ground turkey with the rest of the taco seasoning
- While that is cooking cut up, cilantro, onion, cherry tomatoes, drain and rinse black beans
- Take sweet potatoes out and assemble meal prep into four container starting with the fry layer, then ground turkey, cheese, and veggies. Top with Greek yogurt or sour cream on the side.
- When heating, I remove the sour cream And microwave for 45 seconds. Enough to hear it up a bit but not make the veggies too warm.
